挪威人(甚至是一般西洋人)﹐在政治上非常自由開放﹐但在飲食上卻頗保守克制﹔中國人政治上極度專制﹐但在飲食上卻異常放任﹐這種恰恰相反的差異相當有趣。你說中國人沒有自由麼﹐但他們亂吃的自由卻大得很。我看政治與飲食之間是頗有其因果關係的。挪威人﹐由於政治上高度自由開放﹐政府需要向人民負責﹐所以不會容許民眾亂吃﹐諸事透明﹐自然行事也不得不多服膺於知識和常識。而中國由於極度專制﹐政府最關心的是一切會直接危及政權穩定統治的活動﹐而飲食顯然不被歸作此類﹐故得享自生自滅的自由。更重要的﹐是由於中國民眾長期在統治者壓制下﹐需不定期作非政治性的發洩以求取心理平衡﹐大吃大喝﹐盡情咬噬﹐吃盡天下奇珍異品﹐讓奴才可在難得享有自主權的口腔蠕動中獲得支撐「活著」的快感和生趣﹐而政府也樂得看到「民以食為天」而不是把精力放到維權上面。大概就如周作人分析中國人嗜鴉片說的那樣吧﹐「中國人富的閑得無聊，窮的苦得不堪，（俱）以麻醉消遣。」
